Packed with nuts, dates and cinnamon, these Paleo Nut Energy Bars are perfect for pre or post crossfit sessions, ski/snowboard day, cycling a century ride or a coffee shop commute.

Ingredients
- 2 cups chopped pecans
- 1 cup chopped almonds
- 1 cup chopped walnuts
- 12-15 dates, finely chopped
- 3/4 cup whole eggs
- 2 tablespoons cinnamon
- 1 1/2 teaspoons vanilla
Instructions:
Preheat the oven to 350 degrees.
Remove pits from dates. In a food processor chop up the dates and nuts. Dont do the dates all by themselves in processor or they will clump. Add a few dates with each handful of nuts you chop up in processor. After everything is chopped mix in a bowl or mix directly onto you cooking pan. Make sure your pan is coated with coconut oil to prevent sticking or use parchment paper with coconut oil cooking spray.
Bake for 16-18 minutes. Allow the bars to cool for 5 minutes, then pull out the wax paper to remove them from the pan. Use a pizza cutter to slice the bars into rectangles, squares, triangles, octagons, dogs or whatever shape you’d like.
